Elizabeth Cheung-Gaffney is currently the general counsel at Adelphi University in Garden City, NY. She has a wealth of higher education and legal expertise, having previously served as general counsel at Long Island University (LIU), legal counsel and programming officer at the The Catalyst Foundation for Universal Education, which ran educational and scholarship programs for marginalized and refugee populations around the world. Prior to her work for the Catalyst Foundation, she worked at NYU Shanghai coordinating the NYU Law program so she brings extensive experience operating international programming. Elizabeth began her law career as a litigator at multinational law firm and in the NYC Board of Education Office of General Counsel. She graduated from Columbia University and Notre Dame Law School.
